A showcase of South East England apples: fresh apple, floral blossom and complex acidity. Three varieties fermented and individually matured for 20 months before bottle conditioning and a further 6 months on the lees prior to disgorging.
Aromas of ripe apples rise from the glass, dried fruit and apricots with a warm mature character. Crisp and dry to taste with complex acidity up front, fruit character and a textured biscuit finish.
Enjoy with foods such as good fish and chips, muscles, oysters and scallops.
